The Washington D.C. restaurant is a hot new dining place that requires at least an hour-long wait before seating for diners to sample its Filipino-inspired cuisine.

The annual magazine listing cited how Bad Saint’s Filipino-American chef Tom Cunanan and co-owners Genevieve Villamora and Nick Pimentel turned their place into a passion project.

“Their food is personal, but it’s so much more than just dishes they ate as kids. Bad Saint is the kind of place I spend all year searching for,” wrote Andrew Knowlton.

Knowlton wrote about the Ukoy (freshwater shrimp fritter, sweet potato, cilantro presented as a cantaloupe-size bright orange tangle of fried shredded sweet potato and shrimp, torn with the hands, and dipped into a spicy cane vinegar and chile sauce), Adobong Dilaw (a tangy stew of chicken, turmeric, and burnt coconut), and Lambanog (a subtly sweet coconut spirit) among the favored dishes offered at Bad Saint.
