De La Salle-College of Saint Benilde (DLS-CSB) student chef Valery Jane Rodriguez Anthony displayed her culinary skills and emerged in the top 5 of the 5th Young Chef Olympiad (YCO) held in India.

Valery Anthony and her chef mentor Thomas Edward Fung Chua placed in the top tier of the 10 finalists in competition against chefs from the world’s culinary capitals who were tested for their mastery of skills, expertise, creativity, techniques, and innovation in two pre-qualifying rounds held across various key cities in India and a grand final round held in Kolkata.

Anthony, a student from the School of Hotel, Restaurant, and Institution Management (SHRIM) of DLS-CSB, who trained in the Italian Culinary Institute for Foreigners (ICIF) in d’Asti, also in the Michelin-star restaurant Il Picolo Principe in Luca, Tuscany, and is a Young Hoteliers’ Exposition competitor, was the lone qualifier from the Philippines. Her chef mentor from DLS-CSB Thomas Edward Fung Chua is a culinary industry practitioner and restaurateur.

“Cheftestant” Valery and Chef Ted presented the Warm Halo-Halo, their version of the country’s favorite dessert which had been praised by celebrity Chef Anthony Bourdain and various world food experts.

“I think my dishes are innovative and creative. Overall, I am very happy,” said Valery Anthony of her top 5 finisher entries at the Young Chef Olympiad.

The Lasallian tandem went against culinary powerhouses such as France, Romania, England, USA, and 45 other nationalities to become part of the finals in the annual cook offs that began in January 29 and ended February 2, 2019.

The YCO is organized by the International Institute of Hotel Management (IIHM) in partnership with the International Hospitality Council (IHC) London as a melting pot of different cultures while showcasing student skills.
